Freezer & Fridge Foods

I love having a selection of veggies and fruits available in the fridge or freezer. One day I was extra adventuresome and I washed, peeled, chopped ALL the fruits and veggies we bought at the farmers market that day. It took me about 2 hours. It was worth it! I find that if I wash the fruits and veggies as soon as we get home, they will last longer [or we end up eating them faster]. For example, I washed & dried the cherries and put them in a bowl. They sat in the fridge next to the cherry tomatoes, asking to be snacked on [rather than junk food]. I am more likely to eat fresh foods if they are ready to eat in plain sight. Another example, raspberries. I find they disappear faster if they are washed and put in a nice bowl in the fridge, rather than left in those yucky plastic containers from the grocery store.

When it comes to the veggies - I chopped them up and put them in individual Ziploc bags and stuck them in the freezer, ready to stir fry. So convenient! The best part of this is that we knew WHERE the produce came from and hold old it was-- something you don't know from the store bought type in the freezer section.

I did make a mistake with one item - [it has been a learning process for me] - I decided to freeze the cherries pits IN. Major DUH. I didn't think that one through and now I believe they are not edible. Do you know how I can use these? The way I see it - I can't throw them in the blender for a smoothie, and when I defrost them, they are complete mush. Ugh. Lesson learned.

In all, I washed, chopped, peeled and dried:  carrots, broccoli, snow peas, cherry tomatoes, green beans, yellow beans, strawberries & cherries. Some went into the freezer, and some in the fridge for quick snacks. Yum!
